Buffalo Chicken Garbage Bread

So I got this recipe on Pinterest, and I wasn't sure about the name, but it's basically like a calzone. It is VERY Good!

Buffalo Chicken Garbage Bread

What you'll need:
  • Refrigerated Pizza dough
  • 1/2 cup Wing Sauce (I used Sweet Baby Rays because it's not too spicy)
  • 2 Chicken breasts
  • 1/3 cup Ranch dressing or Bleu Cheese, whichever you prefer (I used ranch)
  • Mozzarella Cheese, shredded
  • Cheddar Cheese, shredded
I let the pizza dough sit out for about 20 minutes, while I cooked the chicken.

Cut raw chicken into bite size pieces, and cook in skillet with a little bit of Olive Oil. When it's cooked thoroughly mix 1/4 cup of wing sauce into chicken and let simmer a minute or 2. Take Chicken off and let cool

Preheat oven to 425

Mix remaining wing sauce with the ranch or bleu cheese dressing, and spread all over pizza crust. Add Chicken and then top with cheeses. You can add more wing sauce to the top if you'd like it a little spicier.

Roll the dough like a pinwheel until you reach the end. Make sure to tuck the ends of the dough in so the middle doesn't ooze out when baking ;)

Place the bread on a baking pan and bake for 20-25 minutes.

Chicken Rigatoni Pasta

I found this recipe on Pinterest. But I tweaked it a little to fit my family's taste buds :)

On Pinterest it's called 1/2 Pasta
So...

1/2 Pasta or Chicken Rigatoni Pasta

What you'll need:
  • 1/2 box of Rigatoni pasta, cooked
  • 1/2 lb ground turkey, cooked (I used 2 Chicken Breasts)
  • 1/2 tub of Italian Herbs & Cheese Cooking Cream (Philidelphia)
  • 1/2 bag of frozen chopped spinach, cooked 
Mix all cooked ingredients and serve :)

I actually made this with the spinach first and NOBODY would eat it :( so I made it later with no vegetable at all, and added some steamed broccoli to mine, everyone loved it! Mine was really good with the broccoli!
We'll for sure be having this again! The kids ate every bite! That's big!

Crock Pot Potato Soup

Crock Pot Potato Soup

What you'll need:
1 30oz. bag of frozen, shredded hash browns
3 14oz. cans of chicken broth
1 can of cream of chicken soup
1/2 cup onion, chopped
1/4 tsp. ground pepper
1 pkg. cream cheese ~~ don’t use fat free. It WON’T melt!

In a crockpot, combine everything EXCEPT for the cream cheese. Cook for 6-8 hours on low heat. About 1 hour before serving, add cream cheese and keep heated until thoroughly melted. Serve with cheese, sour cream, bacon bits, green onions, or whatever else you think would be good!



Chocolate Eclair Dessert - YUM!

Chocolate Eclaire Dessert

What you'll need:
  • 1 package graham crackers
  • 2 packages instant vanilla pudding 3 ounce
  • 3 ½ cups milk
  • 1 container thawed whipped topping 8 ounce
  • 1 ½ cups powdered sugar
  • 3 Tablespoons milk
  • 2 packages pre-melted unsweetened chocolate 1 ounce
  • 2 teaspoons corn syrup
  • 2 teaspoons vanilla flavoring
  • 3 Tablespoons softened butter or margarine
Apply cooking spray to the bottom and sides of a 13 x 9 inch baking pan.

Line the bottom of the prepared pan with graham crackers and then set aside until needed.

Using a large mixing bowl you will add the instant pud and the 3 ½ cups milk. Mix until well blended.

FOLD (do not mix or blend, you must fold or it'll lose it's fluff) in the whipped topping.

Pour half of this mixture over the layer of graham crackers.

Add another(a) layer of graham crackers over the pudding mix.

Cover this layer with a layer of pudding and repeat while ending with the addition of the last graham cracker layer.

Place in the refrigerator to chill for about 2 to 3 hours.

While the cake is chilling you can prepare the icing: 

In a small mixing bowl add the 2 packages pre-melted unsweetened chocolate, corn syrup, vanilla flavoring, powdered sugar and the softened butter or margarine. Beat to completely blend and until the mixture is smooth.
Spread icing mixture over the entire cake and then return to refrigerator to chill overnight before cutting and serving.


This was SO GOOD!! YUM!

Taco Bites

Taco Bites

What you'll need:
  • 1 lb hamburger meat
  • Package of taco seasoning
  • Wonton Wrappers
  • taco toppings -- Cheese, lettuce, tomatoes, salsa, onions
Preheat oven to 425

Brown hamburger meat and add taco seasoning and cook as directed on pkg.

Place wonton wrappers in muffin pan and fill with taco seasoning and cheese and bake 8 minutes.

Add the rest of your taco toppings and enjoy :)

Garlic & Brown Sugar Chicken

So... I've been slacking, er.. I mean really busy, and haven't posted my new recipes in a while! Oops! So I'm posting a whole slew of them tonight! YAY! :)

Garlic & Brown Sugar Chicken

What you'll need:
4 boneless skinless chicken breasts
4 garlic cloves, minced
4 tablespoons brown sugar
3 teaspoons olive oil
    • Preheat oven to 500 and lightly grease casserole dish
    • In small saute pan, saute garlic with the oil until tender
    • Remove from heat and stir in brown sugar.
    • Place chicken breasts in the prepared baking dish and cover with the garlic and brown sugar mixture.
    • Add salt & pepper to taste.
    • Bake, uncovered, for 15-30 minutes.

This was pretty tasty chicken!

Homemade Playdough :)

Ok so this is "1 new recipe/week" this isn't food, but it is a recipe ;)  And it's something the kids can help do!

Homemade Playdough:

What you'll need:
  • 1 cup flour
  • 1 cup warm water
  • 2 teaspoons cream of tarter
  • 1 teaspoon cooking oil
  • 1/4 cup salt
  • food coloring
  1. Combine all ingredients (except food coloring) in a medium-sized saucepan.
  2. Stir over medium heat until smooth
  3. Stir continuously until the dough balls (about 1-2 minutes) remove from heat
  4. When the dough is cool enough to handle knead until smooth.
  5. Form into a ball

6. Divide into as many colors as you'd like to make. A single batch makes a good amount for four colors.


7. Add food coloring to the divided dough. I used liquid food coloring, but I've heard the gel food coloring works better, or even koolaid packets.

8. Knead the food coloring into the dough, on wax paper, to protect your counters. I will be using gloves the next time I make it, because my hands are a very colorful mess now!

9. When the dough is a consistant color, ball and set aside.

Store the dough in separate airtight containers. The dough will stay soft for several weeks if stored airtight.




Abby had so much fun helping me make this... And even more fun playing with it!!! This was so easy to make, and I feel safer when they "accidentally eat" the playdough, because I know EXACTLY what's in it!!!

The Best Taco Soup!

A few weeks ago my fantastic Mother In Law made some Taco Soup. It was so good. I've never been a soup kinda person, especially taco soup, with all kinds of beans and tomatoes in it... But this was SO good that I had to get the recipe and make it myself!!!

TACO SOUP

What you'll need:

  • 2 pounds ground beef


  • 1 to 2 diced onions


  • 1 (14 1/2-ounce) can diced fire-roasted tomatoes


  • 1 (10-ounce) can RO*TEL® diced tomatoes and green chilies


  • 2 (15-ounce) cans black beans


  • 1 (16-ounce) can pinto beans (I used Great Northern Beans instead)


  • 1 (15 1/4-ounce) can whole kernel corn, drained


  • 2 (4 1/2-ounce) cans chopped green chiles

  • 1 (1-ounce) envelope taco seasoning


  •    1 (1-ounce) envelope ranch salad dressing and seasoning mix

    Garnishes: Corn chips, cheese, sour cream, green onions

    1. In a large skillet, cook beef and onions over medium heat until beef is no longer pink. Drain, using a slotted spoon, as you transfer browned beef and onions to a Dutch oven, stockpot or slow cooker.
    2. Add tomatoes, black beans, pinto beans, corn and green chiles. Stir in the taco seasoning and ranch salad dressing mix.
    3. If you’re cooking on the stove, cover the pot and simmer soup over low heat for 30 minutes up to 1 hour, stirring occasionally. If you’re using a slow cooker, cook on low heat for 6 to 8 hours.
    4. Garnish individual servings with corn chips, cheese, sour cream and green onions, if desired.



    Ya'll know mine went straight in the crock pot! My crock pot is a good friend :) I let it sit for about 8 hours on low. It was SO good!! Mmmmmmm

    Apple Cinnamon Oatmeal Muffins

    Apple Cinnamon Oatmeal Muffins

    1½ cups flour (to be healthier, use Whole Wheat flour)
    ½ cup rolled oats
    1/3 cup light-brown sugar, packed
    1/3 cup sugar
    cinnamon to taste
    2 teaspoons baking powder
    1/2 teaspoon salt
    2/3 cup milk or water
    1/2 cup oil
    2 eggs, lightly beaten
    1 teaspoon vanilla
    1½-2 cups chopped apples


    Preheat oven to 400°F and grease a muffin pan.
    In a large bowl, stir together flour, oats, sugars, cinnamon, baking powder, and salt. In another bowl, stir together milk/water, eggs, oil, and vanilla until blended. Make a well in centre of dry ingredients and add wet ingredients, stirring just to combine. Stir in apple.
    Spoon batter into prepared muffin cups and bake for 15-20 minutes or until a muffins pass the toothpick test.
    Allow muffins to cool on a wire rack for five minutes before removing from pan to continue cooling.
    Serve warm or completely cooled. But they are best Straight out of the oven!

    Muffins can be frozen.

    Great for Breakfast, or a snack!



    Way too yummy for words! And so easy to make!

    Knock You Naked Brownies

     I took this recipe from my best friend's "new recipe" blog :) Thanks Jess!!

    Knock You Naked Brownies

    1 box German Chocolate cake mix
    1 cup finely chopped pecans (optional)

    1/3 cup and 1/2 cup evaporated milk
    1/2 cup melted butter
    50 whole caramels unwrapped
    1/3 cup chocolate chips
    Powdered Sugar

    preheat oven to 350.

    Mix together cake mix, *pecans, 1/3 cup evaporated milk and melted butter.
    Mixture will be very thick.
     Press half of mixture in greased 9X9 baking pan.
    Bake 10 mins.
     Remove from oven. set aside.
    Melt Caramels w/ 1/2 cup evaporated milk in saucepan on med. heat.
    When melted pour over brownie in baking pan. Top w/ chocolate chips.
    Use remaining brownie to make large square a little smaller than pan. set it on top of chocolate chips.
    Bake 20-25 mins.
    Once cooled sprinkle with powdered sugar.

    This was SO GOOEY AND GOOD!!!

    Lemon Butter Shrimp

    Lemon Butter Shrimp

    What you'll need:

    • Shrimp
    • 1 stick butter
    • Italian seasoning
    • 1 lemon
    • 2 garlic cloves Minced
    Preheat oven to 450
    Melt butter with about a tsp Italian seasoning and garlic cloves, simmer for 1 minute.
    Place uncooked shrimp in baking dish (I used a 9x13 baking dish). Poor butter mixture over shrimp. Squeeze 3/4 of lemon over everything.
    Bake for 10 minutes.
    Turn Shrimp and add lemon wedge to pan.
    Bake until Shrimp is just done, about 5-10 minutes longer.

    Serve with rice.


    This was pretty good. Not the best ever, but pretty good. Very lemony!

    Chocolate Chip Cream Cheese Cookies

    What you'll need:
    • 8 oz pkg cream cheese
    • 1/2 cup margarine
    • 1/2 cup shortening
    • 3/4 cup white sugar
    • 3/4 cup brown sugar
    • 1 egg
    • 1 tsp vanilla
    • 2 1/4 cups flour
    • 1 tsp baking powder
    • 1 tsp salt
    • 1 1/2 cups Mini Chocolate Chips (or any would be fine)
    1. Preheat oven to 375, grease cookie sheets with non-stick spray and set aside

    2. Combine cream cheese, margarine and sugars. blend in egg and vanilla. Add dry ingredients and mix well. Stir in chocolate chips.

    3. Bake 13-15 minutes or until edges are slightly browned.


     I, once again, forgot to pick up the ingredients to make the new recipe I had planned on making, so I had to make something that I had on hand. These turned out really yummy!

    Chicken Crescent Roll Casserole

    Chicken Crescent Roll Casserole

    What you'll need:
    • 2 cans crescent rolls
    Soup mixture:
    • 1 can Cream of Chicken
    • 3/4 cup grated cheese
    • 1/2 cup milk
    Filling:

    • 4 oz cream cheese (very soft)
    • 2 tbsp butter (very soft, but not melted)
    • 1 tsp garlic powder
    • 1 tsp minced onion flakes
    • 2 large cooked chicken breasts, finely chopped
    • 3/4 cup finely grated cheese
    • 1/2 tsp seasoned salt
    • 1/2 tsp ground pepper
    • 2 tbsp milk
    • 1-2 cups cheese for topping
    1. Set oven to 350 and spray 9x13" dish
    2. Mix together milk, cheese and soup in a bowl
    3. In Separate bowl mix soft butter & cream cheese until very smooth.
    4. add in garlic powder, chicken, onion flakes and cheese, mix well until combined.
    5. add in milk and Salt & pepper, mix to combine.
    6. Unroll crescents and place 1 heaping tbsp of chicken mixture on crescent roll then roll up starting at thicker end.
    7. Drizzle small amount of soup mixture in the bottom of the dish. Then place Crescent rolls, seam side down, on top of soup mixture.
    8. Drizzle the remaining soup on top.
    9. Sprinkle with cheese.
    10. Bake 350 for 30 minutes.


    This was absolutely delicious! We loved it!!! I'll definitely be making this again! 

    World's Best Snickerdoodles (or so they say)

    I've never been a fan of Snickerdoodles, so honestly I have never made them! I had some a few years ago that were SO GOOD! So I found this recipe, on Pinterest, and it claimed to be the "World's Best Snickerdoodles" so I thought I'd give it a try!

    What you'll need:
    • 1/2 cup butter (1 stick) softened
    • 1/2 cup sugar
    • 1/3 cup brown sugar
    • 1 egg
    • 1/2 tsp vanilla
    • 1 1/2 cups flour
    • 1/4 tsp salt
    • 1/2 tsp baking soda
    • 1/4 tsp cream of tarter
    For rolling:
    • 2 tbsp sugar
    • 1 tsp cinnamon
    1. In a large bowl, cream together the butter and sugars with an electric mixer on high speed. Add the egg and vanilla and beat until smooth.

    2. In another bowl, combine flour, salt, baking soda and cream of tarter.

    3. Pour the dry ingredients into the wet ingredients and mix well.

    4. Preheat oven to 300 degrees while you let the dough rest for 30-60 minutes in the refrigerator.

    5. In a small bowl, combine sugar with the cinnamon for the topping.

    6. Take out about 2 tbsp of dough and drop into the cinnamon sugar mixture and roll into a ball. (mine was pretty sticky, but took the ball shape after rolled in the cinnamon/sugar) Press it onto an ungreased cookie sheet. Repeat for the remaining cookies.

    7. Bake the cookies for 12 to 14 minutes, and no more. The cookies may seem undercooked, but will continue to develop after they are removed from the oven. When the cookies have cooled they should be soft and chewy in the middle.

    Makes 16-18 cookies... unless you're like me and dropped WAY too much batter on the pan, then it makes about 12 cookies!



    This lone cookie is the very last one! So I guess they were pretty good... As for the "Worlds Best Snickerdoodles" I'll let you decide :)

    Chicken Roll-Ups

    I am so SO far behind on my blog! I will try to be better! I have got 3 recipes to post tonight. I'm slowly, but surely, catching up!

    Chicken Roll-ups

    What you'll need:

    • 1 pkg crescent rolls
    • 2 chicken breasts cooked however you prefer then chopped thin
    • 8 oz cream cheese
    • 1 1/2 cups Cheddar shredded
    • Salt & pepper
    • melted butter & bread crumbs
    1. Combine chicken, Cheese, salt & pepper.
    2. Spoon onto crescents. Roll up making sure they are sealed around the chicken mixture.
    3. Brush tops with butter and sprinkle with bread crumbs
    Bake at 350 for 20-25 minutes

    Now, I cannot honestly say this was my favorite recipe. It just seemed to be missing something.
